Bread and Butter Pudding

A warm and delicious pudding that can be served with cream or custard. You could add marmalade or another spread on the slices of bread to make this even more yummy!

Ingredients– serves 4

40g Butter

6 slices of stale bread

60g Sultanas or other dried fruit

Zest of 1 Orange

2 Tablespoons of sugar

1 Teaspoon of cinnamon

150ml Milk

150ml Double cream

2 Large eggs

1 Teaspoon of vanilla extract

Method

  • Preheat the oven to 190c/ 170c/ gas mark 5. Grease a small oven proof dish.
  • Lightly butter both sides of the bread slices and marmalade if you choose. Cut the bread slices into quarters diagonally to make triangular shapes.
  • Arrange the bread into the prepared dish with the points upwards. Sprinkle on the dried fruit and the orange zest.
  • Mix the sugar with the spices. In a bowl or jug whisk together the milk, double cream, egg and vanilla extract and half of the sugar and spice mix. Pour this over the bread ensuring that all the slices are moistened by the liquid.
  • Sprinkle the remaining sugar and spice mix over the pudding.
  • If you have time leave the pudding to stand for 1 hour to allow the bread to soak up the liquid.
  • Bake in the oven for 30 minutes until crisp and golden brown.
  • Serve warm with custard or cream or both!
