A quick and simple recipe to use up all those bananas that you pick up at the Pantry.
Ingredients
4 Ripe Bananas, Peeled
250g Caster Sugar
2 Eggs
140g Softened Butter
250g Plain Flour
2 tsp Baking Powder
100g Walnut Pieces
Method
- Heat Oven to 190C/ 170C fan/ gas 5 and line a loaf tin with baking parchment.
- In a large bowl, mash together the bananas and mix in the sugar with an electric whisk.
- Beat in the eggs slowly and mix until fully incorporated.
- Add in the butter and mix for a while longer till everything is mixed in.
- Sieve in the flour and baking powder and fold together with a spatula, then add the chopped walnuts and mix.
- Pour into the lined loaf tin and bake for one hour or until a skewer inserted into the middle comes out clean.
- Leave to cool slightly in the tin and then turn out onto a wired rack.
- Enjoy!!
Can be kept in an airtight container for up to 3 days ta room temperature.
